This month we'll be discussing anthocyanins, naturally occurring plant pigments responsible for the deep blue, purple, and red colors of foods such as blueberries, blackberries, cherries, and purple cabbage.

Anthocyanins help protect blood vessels by acting as antioxidants. They reduce oxidative stress, support endothelial function, and help regulate inflammation. Because of these effects, they have become one of the most extensively studied groups of dietary polyphenols for cardiovascular and metabolic health.

What Are Anthocyanins?

Anthocyanins belong to a larger family of plant compounds called polyphenols, specifically a subgroup known as flavonoids.

Plants produce these pigments to attract pollinators and protect themselves from ultraviolet light and environmental stress. When we eat anthocyanin-rich foods, these compounds interact with many biological pathways involved in vascular health, inflammation, and oxidative stress.

What is Oxidative Stress?

Every cell in your body continuously produces energy. As a natural byproduct of this process, cells generate highly reactive molecules called reactive oxygen species (ROS), often referred to as free radicals.

In small amounts, these molecules are beneficial. They help cells communicate, fight infections, and respond to stress. Problems arise when ROS accumulate faster than the body can remove them. This imbalance is called oxidative stress. Excessive oxidative stress can damage proteins, fats, and DNA while impairing the function of cells throughout the body, including the endothelial cells that line our blood vessels.

Antioxidants help restore the balance between ROS production and the body's ability to remove them.

While antioxidants can directly neutralize some free radicals, many dietary antioxidants also activate the body's own defense systems. This increases the production of antioxidant enzymes that help cells better manage oxidative stress over time.

What Happens to Blood Vessels Under Oxidative Stress?

Blood vessels are lined by endothelial cells that control circulation, nutrient delivery, and communication with surrounding tissues. When oxidative stress becomes excessive, these cells become damaged.

Research suggests oxidative stress can:

  • decrease nitric oxide availability, reducing the ability of blood vessels to relax

  • increase inflammatory signaling within the vessel wall

  • impair endothelial function

  • contribute to vascular aging

→ Over time, these changes may increase the risk of cardiovascular disease and other chronic conditions.

Spotlight on Our Research

Dr. Vincent Li, President and CEO of The Angiogenesis Foundation, recently presented new findings at NUTRITION 2026 examining anthocyanin diversity across fresh and processed blueberries.

Preliminary analyses suggest that anthocyanin content can vary substantially between blueberry products, even when they look or taste similar.

→ In other words, not all blueberries contain the same amount of these bioactive compounds.

As this work continues, researchers hope to better understand how food variety and processing influence anthocyanin content and potential health benefits.
