Pumpkin (Cucurbita sp.) is a widely consumed vegetable, valued not only for its nutritional profile but also for its significant medicinal and economic advantages. Pumpkins are low in calories but dense in essential nutrients like Vitamin A, Vitamin C, potassium, and fiber. Beyond basic nutrition, the pumpkin—including its flesh, seeds, and peel—is a rich source of bioactive compounds.
Among these bioactives, cucurbitacins—bitter-tasting triterpenoids—stand out for their impressive pharmacological properties. While pumpkins are often celebrated for their carotenoids and antioxidants, emerging research reveals that cucurbitacins may play an important role in supporting angiogenesis balance—helping to regulate blood vessel growth crucial for wound healing and disease prevention.
What Exactly are Cucurbitacins?
Cucurbitacins are naturally occurring compounds found in the pumpkin’s flesh, peel, and seeds. These triterpenoids (including cucurbitacins B, D, E, I, K, and L) give some pumpkin varieties their characteristic bitterness. In plants, they serve as defense molecules against pests. In humans, however, they’ve attracted scientific attention for their anti-inflammatory, antioxidant, and anti-cancer activities.
Research has shown that pumpkin peel and pulp contain a variety of cucurbitacins along with other beneficial phytochemicals—such as phenols, flavonoids, and carotenoids—that act synergistically to promote cellular health and resilience.
What the Research Shows
According to a recent review (Shajan et al., Future Foods, 2024), cucurbitacins contribute to the anti-cancer and anti-angiogenic potential of pumpkins. They’ve been shown to:
- Inhibit abnormal angiogenesis, the process by which tumors form new blood vessels to fuel growth. 
- Induce apoptosis (cell death) in cancer cells and modulate signaling pathways involved in inflammation and proliferation. 
- Exerts antioxidant effects, neutralizing reactive oxygen species (ROS) that can trigger pathological vessel growth. 
- Supports immune and metabolic regulation, complementing other pumpkin bioactives like tocopherols and phenolics. 
Notably, pumpkin extracts containing cucurbitacins have demonstrated anti-proliferative effects in cancer cell models and protective effects in animal studies of colon and liver cancers. These findings position cucurbitacins as promising compounds for angiogenesis modulation and cancer prevention—a natural way to help the body maintain vascular balance.
How to Enjoy Cucurbitacins This Fall

You don’t need to extract these compounds in a lab to reap their benefits! Cucurbitacins are found in several edible pumpkin components:
- Pumpkin peel – Rich in cucurbitacins and phenolics. Try blending roasted peel into soups or purees. 
- Pumpkin flesh – Contains moderate levels; incorporate it into muffins, pasta, or roasted vegetable dishes. 
- Pumpkin seeds – Offer complementary bioactives like phytosterols and polyphenols. Sprinkle them on salads or oatmeal for a nutrient boost. 
Because cucurbitacins are responsible for the bitter taste in some gourds, balance their flavor with naturally sweet or savory ingredients—such as cinnamon, coconut milk, or roasted garlic. Even mild pumpkin varieties still deliver small amounts of these bioactives, especially when the peel is included.
